Thanks to my walking buddy! I wish I had learnt it early in my cooking career :-)</div><div class="separator" style="clear: both; text-align: left;"><ul style="text-align: left;"><li>Add oil to tava, season with mustard, urad, methi, pepper, jeera/cumin</li><li>Add diced onions, garlic and one tomato, saute well</li><li>Add kulambu veggie...eggplant or karela or bindhi</li><li>In a mixie jar - add little onion, one small tomato, jeera/cumin, pepper, big jeera (saunf), few curry leaves, little cilantro, 4 cashews - Raw grind all of them together</li><li>Add the paste to the saute pan above, along with sambar powder and dhania powder</li><li>Add water, salt for the gravy and let all the masalas boil well</li><li>Add tamarind water and cook few more minutes</li><li>Add tiny jaggery and cook for a min and turn off</li><li>Goes well with Rice, dosas, idlis, adai.</li><li>Tempted to try making egg kulambu this style!!!!</li></ul></div><blockquote style="border: none; Atlast made it on my third attempt, tried to follow youtube video, but kept melting and merging like a flat bread. So decided to post the recipe in my blog on what helped me to get to this shape :-)</div>

<li>Butter - 200gms + few gms is ok too if the bar weighs more</li>
<li>Add to a bowl, bring to room temperature and whisk manually for few mins</li>
<li>Add one cup powdered sugar and mix it well</li>
<li>Add one full egg and one spoon vanilla extract, mix well</li>
<li>Use a flat spoon or spatula and start adding the flour in four batches (using the seive)</li>
<li>4 cups almond flour and 3 cups of buttermilk baking mix (pancake mix)</li>
<li>Finally mix well and move the dough into a ziploc bag </li>
<li>Put in Fridge overnight</li>
<li>Next day make small rounds and flatten little and slit using knife (slightly), no deep cuts</li>
<li>Place in a plate, wrap with plastic wrap - put it in freezer for 10mins</li>
<li>Preheat oven at 350f and place the cookies in a tray or baking sheet</li>
<li>Bake for 15 to 20mins, keeping an eye.</li>
<li>When almost brown, turn off and cool it well before U touch!!!</li>
<li>Yum yum cookies are ready</li>

* I added cinnamon, bay leaves, clove to saute/grinding stuff, as I ran out of garam masala<br />
* Add oil to tava, add the ground masala<br />
* Add turmeric, chilli powder, channa masala powder, little sambar powder if U like<br />
and then add salt too<br />
* Let the masala cook for 5mins and then add the veggies<br />
* Let it cook in medium for 15 to 20mins, then turn off<br />

<b><u><i>Recipe</i></u></b><br />
* Saute in oil - one spoon jeera, little ginger, garlic, 3 g.chillies<br />
* Add a bowl full of cilantro and another bowl full of mint - all washed<br />
* Add a tiny tamarind peice and saute for just 2 or 3 mins<br />
* Let it cool and grind well with half cup water<br />
* Cook basmati rice one cup with 2.75 cups water in rice cooker and let it cool<br />
* Add oil to tava - season with mustard, channa dhaal, one red chilli<br />
* Add cashews - roast well, then add roasted peanuts, ground green paste<br />
* I added green onions as well and then in few mins, add cooked rice carefully<br />
* Dont mash it, mix gently, so the texture of the rice is retained<br />
* Serve with Onion Raita! Yummy yummy it was.<br />

One of my favorite snack this winter. Quick and easy.<br />

Recipe:</div>
<div>
- soak one cup sabudana for 4 hrs with little water floating on top</div>
<div>
- add 3 spoons curd and one spoon salt and mix well to the above</div>
<div>
- after 2 hrs, add all toppings - cilantro, ginger, curry leaves, onions, asafoetida </div>
<div>
- add 4:1 rice flour to urad flour to the above mixture, but only as much as you need to bind</div>
<div>
- I use very little flour and bind tight with hands on!</div>
<div>
- deep fry in hot oil by throwing irregular shapes of the dough</div>
<div>
- yum yum hot hot pakodas are ready.</div>

Thanks to my WoW buddy, one of my most fav snack this year. Involves lot of ingredients, but easy cooking. Here we go...<br />
<br />
<ul>
<li>3 cups - Fine chopped cabbage or grated doodhi (squash/sorrakkai) and squeeze water out</li>
<li>In a large bowl add - 1 cup coarse sooji, half cup wheat flour, half cup besan</li>
<li>Add 1 spoon jeera, 1 spoon salt, little sugar or jaggery, lemon juice, chopped cilanto</li>
<li>Add paste of 2 green chillie and ginger ground fresh</li>
<li>1/2 Onion ground into paste - squeeze excess juice - save it</li>
<li>Mix all of the above, make a dough and make long tube shapes like below</li>
<li>Steam for 20mins, let it cool down, then only slice them</li>
<li>When ready to eat, season with mustard, asafoetida, cilantro and toss the muthia in for few mins.</li>
<li>Yumm Yumm snack is ready!</li>

Have been attempting to do snack items, rather than a meal item, so it is easier to consume fresh. Farmers market sells really fresh white pumpkins, which I decided to make raita.<br />
<br />

<li>Chop without skin, just like above into tiny peices</li>
<li>Add oil to tava, then add mustard, asafoetida, one slit green chilli</li>
<li>Add the chopped pumpkin and little salt and sprinkle little water, close with a lid</li>
<li>Cook for 5 mins and let it cool</li>
<li>Then add thick yoghurt and eat like a snack</li>
<li>Good for weight loss I hear!</li>

Blogging after ages! Recently got to explore more recipes with curry leaves. I feel rotis/uthappams/chutneys/buttermilk are best ways to consume curry leaves, so we dont throw them away. Here is the recipe..<br />

<li>Grate 2 long radishes or 3 cups of grated cauliflower </li>
<li>Chop 3 handful of curry leaves</li>
<li>Add oil to tava, then radish, turmeric, curry leaves, salt, little garam masala</li>
<li>Saute 5 mins, turn off, let it cool down</li>
<li>Add equal amount of atta, just to coat the veggies and make the dough</li>
<li>And make rotis as you normally would make</li>
<li>As you cook, enjoy the aroma of curry leaves!!!</li>

After my recent trip to Vietnam, I was super thrilled to make the fresh spring rolls!<br />
<br />
<i><u>Recipe:</u></i><br />
<br />
<ul>
<li>From the asian stores, try to get the rice paper and bean threads (thin noodles)</li>
<li>Boil water with one spoon salt and then add the thin noodles, cook for 5mins</li>
<li>Drain the water and add more cold water and drain it.</li>
<li>Saute with 2 spoons oil, tofu with pepper salt</li>
<li>Rest of veggies you can use it raw (parsley, cilantro, lettuce, carrots/cucumber)</li>
<li>Dip the rice paper in warm water and lift it immediately up and shake the water off</li>
<li>Start setting up all the veggies, noodle, tofu etc and roll it.</li>
<li>Serve it with the peanut sauce!</li>
</ul>

<span style="font-family: inherit;"><span style="font-size: 15.4px;"><i><u style="background-color: white;">For the peanut sauce :</u></i></span></span><br />
<ul style="background-color: white;">
<li><span style="font-family: inherit;"> Grind 5 red chillies, 2 garlic pieces, little sugar and salt for the full dish</span></li>
<li><span style="font-family: inherit;"> Add 2 cups water and let it boil for few mins and turn off.</span></li>
<li><span style="font-family: inherit;"> then add some tamarind and jaggery water to it, mix well.<span style="font-family: inherit; font-size: 15.4px;"> </span></span></li>
<li><span style="font-family: inherit;"> Let the liquid cold and then add 2 handful roasted unsalted peanuts</span></li>
<li><span style="font-family: inherit;"> Grind well and sauce is ready!</span></li>

<i><b><u>Recipe for the powder (save it for 2 times):</u></b></i><br />
<br />
<ul>
<li>Dry fry 2 spoons channa dhaal and then add 4 spoons dhania, fry few mins</li>
<li>Then add 6red chillies and quarter spoon jeera, pepper, methi seeds</li>
<li>When about to turn off add some khasa khasa and asafoetida</li>
<li>And turn off, let it cool and grind almost fine, but not fine</li>
</ul>

<b><i><u>Sambar Recipe:</u></i></b></div>
<div>
<ul>
<li>Pressure cook 2 handful dhaal, with little turmeric and 1 spoon oil</li>
<li>Saute in little oil, one green chilli, half big onion and one tomato</li>
<li>Add the sauted veggie to the dhaal </li>
<li>Add salt, tamarind or soaked mavathal, half of the ground powder</li>
<li>Add half tablespoon regular sambar powder - all to the cooker with dhaal.</li>
<li>Pressure cook again for one whistle</li>
<li>Open after 10mins, then open boil few mins, then add little jaggery, turn off</li>
<li>Season with ghee, mustard, urad, jeera, asafoetida, curry leaves</li>
<li>Top it with Cilantro...yummy yum sambar ready</li>
</ul>

<br />
<i><b>Recipe</b></i>:<br />
<br />
<ul>
<li>Toppings - Chopped persian cucumber, onions, tomatoes, grated carrot, sev</li>
<li>Puri - I buy from Pani Puri Company, local store</li>
<li>Stirred yoghurt, add little water if needed</li>
<li>Green Chutney - green chillies, Cilantro, Mint, lemon juice, black salt, chaat masala, salt, ginger, jeera</li>
<li>Sweet Chutney - Soaked dates, melted jaggery, tamarind extract, little chilli powder, chaat masala, black salt</li>
<li>White Peas Masala - Make similar to channa masala</li>
<li>Arrange the puri (opened up on top) in a bowl, add white peas masala</li>
<li>Add three liquids little each - 2 chutneys and yoghurt</li>
<li>And add the toppings - little of each</li>
<li>Serve right away - have to eat right away, otherwise it will become soggy!</li>

<b>Happy New Year to you all!</b><br />
Starting 2017 with a very yummy recipe from my cousin, learnt during my recent trip to India.<br />
2 tricky things - Frying and Salt (as cheese has its salt too!)<br />
<br />
<b><i>Recipe:</i></b><br />
<br />
<ul>
<li>3/4th cup of cubed cheese (I used Cheddar), half cup panner - tiny cubes or grated</li>
<li>Half cup steamed corn, 4 green chillies fine chopped, 4 medium sized potato boiled, peeled</li>
<li>Few Cilantro/Coriander Leaves chopped, just 1/3rd spoon salt - cheese will cover the rest</li>
<li>Mix all of the above, make a dough and make into shapes</li>
<li>Dip in corn or maida water and roll it on ground fresh bread, coating is ready!</li>
<li>Move it to fridge if you are not using it right away</li>
<li>When ready to eat, deep fry in medium flame, only 4 cutlets at a time</li>
<li>Yummy Yummy cutlet is ready, thoroughly enjoyed it!</li>
